How to cook Braised Hamburg Steak (Beef and Pork)

The Japanese ” Hamburg steak” is characterized by the addition of a lot of binders, such as chopped onions and breadcrumbs, to make it soft and juicy. The inclusion of non-meat ingredients was for economic reasons to reduce the amount of meat used by adding bulk, but today that is the key to the taste of a Japanese hamburg steak.

  • 1 clove of garlic
  • 1/2 of an onion
  • Buna-shimeji mushroom 1/2 pack
  • Canned tomatoes, 200g
  • Canned demi-glace sauce, 140g
  • Red wine 150ml
  • Laurier, one
  • 1 teaspoon granulated consommé
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • A little pepper
  • 5g salted butter
  • Less than 1 teaspoon dark soy sauce

  • A small amount of parsley
▽Hamburg Steak Procedure
  1. Chop the onions. Heat oil in a frying pan and fry over low-medium heat until the onions turn golden brown. When the frying is finished, transfer them to a bathtub and let them cool.
  2. Place the ground beef and pork in a bowl, add salt and knead quickly until the mixture is sticky.
  3. Add all the other ” Hamburg steak ingredients” except for the potatoes, and mix well. Heat the potatoes in the microwave.
  4. Form in the Hamburg steak with the hamburger cheese mixture and rest in the refrigerator for 30 minutes. This will prevent excess juices from escaping when baking.
  5. Heat oil in a frying pan and fry the hamburg steak for 2 to 3 minutes on each side. At this point, also fry the potatoes that have been microwaved in the microwave and take them out once they are done. Turn them over, reduce the heat to low, cover and steam for 8 minutes.
▽Braised Sauce Procedure
  1. Finely chop the garlic, thinly slice the onion and separate the buna shimeji mushrooms into small bunches.
  2. Heat butter in a frying pan and fry garlic. Add buna-shimeji and fry gently. 3.
  3. Add the can of tomatoes, can of demi-glace sauce, red wine, bay leaf, consommé, sugar, salt and pepper, and cook for 10 to 15 minutes over medium heat.
  4. Add butter and soy sauce as a secret ingredient.
▽Finishing steps
  1. Add the sauce made in the “Braised Sauce Procedure” and the potatoes, once removed, to the hamburgers made in the “Hamburg steak procedure”.
  2. Cover and simmer for 5 minutes over medium heat. Place in a bowl and sprinkle with parsley.
