How to cook Japanese Meat Sauce Rice Casserole (Doria)

It is generally prepared by placing the buttered rice or pilaf in a buttered heatproof container, covering it with béchamel sauce, sprinkling shaved Parmesan cheese over it and baking it in the oven until it browns.
If you add shrimp or squid, it’s called seafood doria; if you add chicken, it’s called chicken doria; if you add curry, it’s called curry doria. Depending on the ingredients and sauce, it is called variously called rice gratin.

Japanese Meat Sauce Rice Casserole (Doria) ingredients
  • 1/2 medium onion
  • A quarter of a small carrot
  • 1/3 of a celery stalk
  • 200g ground beef and pork
  • 150ml of water
  • 1 teaspoon granulated consommé
  • 20g of tomato paste
  • 2 tablespoons of tomato ketchup
  • 1 teaspoon of honey
  • A pinch of salt and pepper
  • 5g salted butter
  • Less than 1 teaspoon dark soy sauce
Béchamel sauce (White sauce) ingredients
  • 12g salted butter
  • 1 tablespoon of flour
  • Milk 200ml
  • A pinch of salt and pepper
Finishing ingredients
  • Butter with salt, to taste
  • Rice, when appropriate
  • 2 eggs
  • Pizza cheese, to taste
  • A small amount of parsley
Japanese Meat Sauce Rice Casserole (Doria) Procedure
  1. Finely chop the onion, carrot and celery. Remove the strands from the celery and chop it up.
  2. Heat the olive oil in a frying pan and fry the ground beef in medium heat.
  3. Add water, consommé, tomato puree, tomato ketchup and honey to #2 and cook for 10 minutes on low-medium heat. Add salt and pepper, butter and soy sauce.
Béchamel sauce (White sauce) Procedure
  1. In a frying pan or pot, make the white sauce. Heat the butter, and when it is completely melted, add the flour, sifting it lightly, and mix while heating.
  2. Add the milk, a little at a time, and stir until the mixture is thick enough to form a lump. Add the cream and mix in again. Adding the milk a little at a time will prevent lumps from forming.
Béchamel sauce (White sauce) Procedure
  1. Preheat oven to 250 degrees.
  2. Place rice, “white sauce”, “meat sauce” and an egg in the center of a buttered baking dish. Sprinkle the pizza cheese and breadcrumbs over the top.
  3. Bake in a preheated oven at 250 degrees Celsius for 10 to 12 minutes.
  4. Garnish with parsley at the end of baking.
TIPS for making a good white sauce

(1) Do not burn the butter.
(2) Sprinkle the flour.
(3) Add the milk little by little, and repeat the process of adding more milk.
(4) After adding all the milk, heat it while kneading until it is no longer powdery.
(5) If adding the cream, add it last.
